Where there is food there is love!
Hi, Gigi here with my very first food blog. I am a maman of two beautiful amazing daughters. My passion for nutrition is most important to maintain a healthy heart and so it is very exciting for me to share my fave scrumptious recipes with all of you. Today’s recipe will be my yummy Crunchy granola coconut cups. These are a staple in our home! You can grab them on the run, for breakfast, snacktime, at the beach etc. They are packed with wholesome goodness and it will give you many nutrients to start your day on a good note! 🎵


Ingredients
- ½ cup of melted coconut oil
- â…“ dark brown sugar
- 3 large eggs
- 1 tsp of vanilla (preferably from mexico lol)
- 1 ¼ cup of oats
- ¼ cup pumpkin seeds
- ¼ cup flax seeds
- ¼ cup chia seeds
- ¼ cup dried cranberries
- ½ cup of dark choco chips
- ¼ cup shredded coconut
- ¼ cup hulled sunflower seeds
- ¼ cup hemp seeds
Instructions
- Preheat oven to 350 degree F.
- Grease pan with preferred oil or my preference is to use parchment baking cups so I am guaranteed a stick free pan.
- To extract more flavor from the pumpkin seeds, roast in pan with butter and add maple syrup or brown sugar (let cool)
- In a large bowl whisk together oil, sugar, vanilla and eggs
- Once whisked, add all other ingredients.
- spoon into prepared muffin cups.
- Bake for 20 mins.
